Biscardo Amarone della Valpolicella Classico DOCG

£29.95

The Biscardo Family have been making wine from their base in Soave for over 150 years and are currently led by brothers Maurizio and Martino.

With Amarone, the quality of the grape skin is very important factor in the final level of tannins, colour and intensity of flavour. The process of desiccation not only concentrates the juices within the grape but also increases the skin contact. The drying process further metabolizes the acids within the grape and creates a polymerization of the tannins in the skin which contribute to the overall balance of the finished wine. The length of the drying process is typically 120 days. The grapes are then crushed and go through a dry, low temperature fermentation process which can last up to 50 days. After fermentation, the wine is then aged in stainless steel tanks and then small barrels.

This wine is made from a blend of Corvina 80%, Rondinella 10% and Molinara 10%. With an intense and persistent nose, this wine has a velevety mouthfeel with plenty of cherry and bitter almond notes on the palate.
